HUNGRY? GO BAKE A BROWNIE

When I'm away from home working, my mind often drifts onto the subject of good tasting food. I've talked enough about how bad the food is up here so I won't expand. This is a recipe for chocolate brownies, it's very very very easy and they taste great, so go make/bake some, eat them and tell me how good/bad they were and I will live vicariously through your taste buds :)

One thing to remember with this recipe is that the better the quality of the chocolate the better the end product will taste, so spend a little more and buy the good stuff. Oh and I never said this was going to be a healthy recipe...ok!

Chocolate Brownies

100g unsweetened chocolate
8 tablespoons of unsalted butter
1 cup of sugar
2 eggs
1/2 cup plain flour
1/2 teaspoon of vanilla essence/extract

Preheat the oven to 175 C. Combine the chocolate and butter in a small saucepan, (reserve a little butter to grease the pan with) over a low heat, stirring occasionally. When the chocolate is almost melted remove it from the heat and continue to stir until the mixture is smooth.

Grease the baking tray (a 20cm square one will do) or you can line it with greaseproof paper and grease that.

Transfer the mixture to a bowl and add the sugar. Beat in the eggs one at a time. Add the flour and the vanilla, stir to incorporate. Stop stirring once there is no more flour visible.

Pour into pan and bake for 20 - 30 minutes or until set and barely firm in the middle, cool on a baking rack before cutting.

Makes around a dozen brownies

You can add chopped walnuts to the mix if you want and you can also ice them with a basic choc icing.

Damn I'm salivating at the thought of them.
